Lazy Sunday Cookies

It’s cold here in NYC today (it’s winter. I know. smarties.) I should say it’s rather windy here in NYC today. It’s also Sunday. A day if not the day in the week that practically requires being utterly lazy and lounging around the house. It also calls for baking.

Particularly yummy, warm goodness in the form of coconut oatmeal cookies.

To make these you’re going to need:

1 1/4 cup All Purpose Flour
1Tsp. Baking Powder
1Tsp. Baking Soda
1/2Tsp. Salt
1Tsp. Vanilla
1 Egg
1 cup Oatmeal
1 cup Coconut (shredded)
1 stick of Butter (melted)
1/2 cup Sugar
1/2 cup Brown Sugar

Firstly, combine your flour, baking powder, baking soda, coconut flakes, oatmeal, brown sugar and salt in a large bowl.

Next add your sugar, beaten egg, vanilla, melted butter and stir until smooth.

ImageForm the mixture into a round shape as you would a regular cookies..

 ..and line them onto your tray of choice.

Bake at 350F for 12-15 min.

*I am currently getting over food poisoning. (Mexican food-1 Me-0) and can’t really eat much, but I couldn’t resist eating one (or two) – (oatmeal is supposed to be good for nausea anyway, yeah?)

Cold Spring Harbor

I love the feel of a small town. The kind where people say hello, offer a kind smile. Sometimes in the hustle and bustle of City life, smiles are only given when paid for.

Cold Spring Harbor is not of those places. It is quaint and lovely. The smell of fresh air and small shops aligned down a long stretch of road gives a feel of a town with some real history. Which it does.

This fire house was the town’s first fire house, chosen in 1896!

This lovely fire truck has a working horn and, yes I got to honk the horn!
