It’s cold here in NYC today (it’s winter. I know. smarties.) I should say it’s rather windy here in NYC today. It’s also Sunday. A day if not the day in the week that practically requires being utterly lazy and lounging around the house. It also calls for baking.
Particularly yummy, warm goodness in the form of coconut oatmeal cookies.
To make these you’re going to need:
1 1/4 cup All Purpose Flour
1Tsp. Baking Powder
1Tsp. Baking Soda
1 cup Oatmeal
1 cup Coconut (shredded)
1 stick of Butter (melted)
1/2 cup Sugar
1/2 cup Brown Sugar
Firstly, combine your flour, baking powder, baking soda, coconut flakes, oatmeal, brown sugar and salt in a large bowl.
Next add your sugar, beaten egg, vanilla, melted butter and stir until smooth.
..and line them onto your tray of choice.
Bake at 350F for 12-15 min.
Stack and enjoy!
*I am currently getting over food poisoning. (Mexican food-1 Me-0) and can’t really eat much, but I couldn’t resist eating one (or two) – (oatmeal is supposed to be good for nausea anyway, yeah?)
